JUMBO Seafood returns with set menus centred around its Award-Winning Chilli Crab that features live crabs drenched in a mouth-watering sauce expertly fused by the culinary team with a myriad of over 10 different Southeast Asian spices, including chillies, turmeric, lemongrass, candlenuts and tau cheo (Chinese fermented bean paste). The flavourful blend of spiciness tinged with a sweet sourness enfolds a subtle eggy fragrance that complements the freshness of crab. Featuring ingredients that straddle different races and cultures, this dish is the epitome of the multi-faceted culinary culture that is uniquely Singaporean. The addictive sauce is something to relish – you don’t want to waste a drop. The highly-recommended accompaniment of golden Deep Fried Mini Buns are the best way to mop up all that finger-licking gravy.

Its Reunion Sets are available on the eve of Chinese New Year (11 February) for those looking to enjoy a one day-exclusive menu. The Reunion Set Menus include Chinese New Year staples such as Prosperity Salmon ‘Yu Sheng’ 发财三文鱼鱼生, Seafood Soup Braised with Fish Maw and Crab Meat, Live ‘Soon Hock’ (Marble Goby) Steamed with Soya Sauce, 5-Head Abalone and Shiitake Mushroom Braised with Spinach and ‘Fa Cai’ in Oyster Sauce, and Rice Steamed with Braised Pork and Whole Conpoy Wrapped in Lotus Leaf. Available from 18 January to 28 February (except 11 February), its Celebration Sets specially put together with signature seafood dishes and crowd favourites such as its Award-Winning Chilli Crab with Deep Fried Mini Buns, 10-Head Abalone Braised with Broccoli and Shiitake Mushrooms, Live Boston Lobster Steamed with Minced Garlic and Glass Vermicelli, and Supreme Seafood Fried Rice with X.O. Zui Teochew Cuisine

This year, Zui (醉) Teochew Cuisine’s sister restaurants Chui Huay Lim Teochew Cuisine and Zui Yu Xuan Teochew Cuisine are marking the festivities with festive delights such as their traditional Teochew ‘Pen Cai’ and ‘Yu Sheng’.

‘Pen Cai’ is renowned for being an indulgent yet staple highlight traditionally served to the Chinese Emperor, but has since evolved into being a celebratory dish for Chinese New Year. Starting from only $288, the Teochew Festive ‘Pen Cai’ 潮式贺年盆菜 comes with luxurious ingredients such as 10-head abalone, fish maw, sea cucumber, live prawns, fresh scallops, conpoy, ‘fat choy’ and roasted duck – all slow – braised to perfection in a superior stock. What makes this dish stand out are the Teochew additions such as dried oysters and pig’s tendon. As this dish is one that requires intricate preparation, advanced orders are highly recommended to ensure availability.

Try also the Teochew Prosperity Salmon ‘Yu Sheng’ 潮式发财三文鱼鱼生, available from $68). This is a refreshing rendition boasting fresh greens such as romaine lettuce, starfruit, mandarin orange zest, ginger, fresh garlic, not forgetting salmon sashimi and a sweet plum sauce dressing.

Diners can opt to celebrate with the exquisite Teochew Roasted Suckling Pig Marinated with Five Spices, an irresistibly-crisp crackling and juicy meat that can only be rendered from a marinade consisting of a variety of spices and a slow roast over a fire stone.

Relish these dishes in their Reunion Sets (available only on 11 February), starting from S$318. The menus also feature Teochew Prosperity Salmon ‘Yu Sheng’ 潮式发财三文鱼鱼生, Whole 3-head Abalone Braised with Broccoli, and Live Prawns Boiled with Chinese Wine.

Highlights for these special menus include the Teochew ‘Puning’ Fermented Bean Chicken 普宁豆酱走地鸡, Teochew Steamed Pomfret 潮蒸鲳鱼, Scallops Sautéed with Broccoli and Squid 油泡苏东带子西兰花, and Wok-Fried ‘Mee Pok’ with Braised Duck in X.O.
