Savour a mouth-watering selection of authentic Japanese fare alongside fresh and innovative SUN signatures. This May’s 2022 Grand Menu launch features a line-up of brand-new dishes, such as:

Tori & Hotate Teriyaki Cheese Kamameshi

Tori & Hotate Teriyaki Cheese Kamameshi ($27.80); Salmon Belly Teriyaki & Unagi Kamameshi ($30.80)

A well-loved dish since historic times that have since become synonymous with SUN with MOON, its simple preparation calls for the strictest choice of ingredients and a skillful blend of seasonings for the ultimate enjoyment. Dig into SUN’s latest innovative creations featuring tender grilled chicken thigh and scallops in sweet soy sauce topped with creamy white sauce and cheese with the Tori & Hotate Teriyaki Cheese Kamameshi, and/or opt for an oceanic indulgence of salmon belly, grilled eel in sweet soy sauce and salmon roe with the Salmon Belly Teriyaki & Unagi Kamameshi.

Spicy Negi Toro Yellowtail Roll

Spicy Negi Toro Yellowtail Roll ($12.90, 4pcs; $24.80, 8pcs); Teriyaki Salmon & Avocado Unagi Crunch Roll ($17.40, 4pcs; $33.80, 8pcs)

Perfect for sharing or personal indulgence, savour the intricate combination of minced fatty tuna with spring onions, egg, cucumber and sriracha layered with marinated yellowtail sashimi and topped with pops of fish roe with the Spicy Negi Toro Yellowtail Roll.

While the Salmon & Avocado Unagi Crunch Roll is simply a visual delight and treat for the belly. Enjoy the complementary mix of salmon, creamy avocado, and egg sushi roll topped with thick and luscious slices of grilled eel in sweet soy sauce contrasted with bites of crispy tempura batter bits.

Yosenabe ($24.80)

A bounty of ingredients brought together in SUN’s latest hotpot featuring sliced salmon, scallop, prawns, chicken, pork, and vegetables for the best of both worlds in one bubbling pot of goodness. Take your pick from a choice of soup stocks. The latest additions include Sansho Miso Soup, a mildly numb and spicy broth or Chicken Pai Tan, a rich and creamy chicken soup base.

Aomori Apios Hokuhoku Age ($7.80)

Aged in Aomori’s remote peninsula with its harsh winters, the natural sweetness of Apios Americana is rightly brought out, with a flavour and texture similar to that of a cross between potatoes and peanuts. Enjoy deep-fried whole Apios tossed simply with salt for a healthy snack.

Shiitake Garlic Butter Itame ($7.80)

The perfect side to any meal, this is a simple yet intensely flavourful dish, especially for garlic lovers! Seasoned shiitake mushrooms pan-fried with fragrant garlic and butter.

Strawberry & Chocolate Brownie Parfait ($12.80)

Always save space for parfait when at SUN! In this decadent chocolate ice cream parfait, relish in the layers of fresh strawberries and chewy mochi balls, crunchy corn flakes, fluffy whipped cream, and luscious chocolate syrup topped with a chunk of rich brownie bites and a delicate crepe rusk.

The latest 2022 Grand Menu Refresh is specially prepared by Executive Chef Mr. Toshio Sawai. Chef Sawai’s illustrious culinary career had its beginnings in Kitcho, one of the most luxurious and reputable Japanese restaurants in Japan in 1983.

After 7 years in Kitcho, Chef Sawai served as Sous Chef at Restaurant Suntory Singapore in Delphi Orchard, as well as Nadaman Restaurant in Shangri-La Hotel. Mr Sawai returned to the Restaurant Suntory Group in 2000 to take on the full responsibility as Executive Chief Chef at Restaurant Suntory in Hotel InterContinental. Chef Sawai then took on the role of Executive Chef at SUN with MOON Japanese Dining & Café.
