Chinese cuisine has been getting more and more popular since the past few years and we can now find them easily at coffee shops or hawker centres. Sweet and Sour Potato Strips is a Sichuan dish which may look simple as the ingredient are easily accessible and only requires a few steps, but it also takes some effort to make, especially in the preparation procedure. However, this remains a well-loved dish among the Chinese which is frequently made and eaten at home. Do take note to use yellow potatoes instead of white ones as they tend to be able to maintain their shape better even after being cooked. This is to prevent breakages of the potato strips which will affect the overall presentation of the dish at the end.
- 2 medium-sized yellow potatoes
- 3 cloves of garlic
- 2 dried chillies
- 2 stalks of spring onions
- 1 tablespoon of oyster sauce
- 2 tablespoons of white vinegar
- 1 tablespoon of soy sauce
- 1 teaspoon of chicken powder
- 1 teaspoon of salt
Remove the potatoes’ skin and slice them into matchstick-sized strips. Make sure that they are of equal thickness as much as possible so that they can be evenly cooked.
Wash the potato strips in water for 2-3 times to remove excess starch.
Boil a pot of water. In the meantime, mince the garlic and chop the dried chillies into small sizes. Separate the white and green parts of the spring onion. Chop them into small sizes.
Once the water starts boiling, add in the potatoes and cook for half a minute. Drain well.
In a pan, heat some oil and stir-fry garlic, spring onion (white) and dried chillies till fragrant. Add the wet seasonings.
Add the potato strips and mix well with the seasonings. Then add the dry seasonings and mix well again. Remove from heat and serve.
