Chicken curry is one of our favourite comfort food because of its savoury and spicy flavour from the various blend of spices in the curry paste. Likewise, it is also one of the most popular dishes in Southeast Asia. People who live in Singapore or Malaysia will know that this dish can be often be enjoyed at local eateries. In this article, we will be sharing with you how you can make an easy Nyonya-style chicken curry at home for your loved ones.
Ingredients:
– 1 chicken
– 5 shallots
– 2 stalks of lemongrass
– 5 pandan leaves
– 1 packet of instant curry paste (we are using A1 brand)
– 2 tbsps of oil
– 500ml milk
– 100ml coconut milk
Preparation
1. Peel and wash the potatoes. Steam until cooked.
2. Peel and chop the shallots into very fine pieces. Pound the lemongrass to release its fragrance and chop each stalk into 3 smaller pieces.
Cooking instructions:
Step 1
Heat 2 tablespoons of oil on medium heat in a pot. Add the shallots and lemongrass. Sauté till aromatic or when the shallots turn golden brown in colour.
Step 2
Add the curry paste and mix well with the shallots and lemongrass. Sauté till fragrant.
Step 3
Add the chicken and stir fry for a minute. Add milk little by little and mix well.
Step 4
Add the potatoes and pandan leaves. Mix well and simmer for a few minutes until chicken is cooked.
Step 5
Add the coconut milk and stir well to mix. Turn off the heat and serve while hot. Apart from going well with rice, you can also soak up the delicious gravy with bread or even naan. It is highly addictive!
